Orange Chocolate Chip Oatmeal Bread

Autumn is the time to bake quick breads! This recipe passed the taste test with my range of boys -- I started with a recipe for Orange Nut Bread from this free PDF Creative Homemaking booklet but modified it to suit my family and also according to what we had around the house.


So this is my version:
Orange Nut Bread

4 cups flour
2 teaspoons baking soda
2 teaspoons salt
1 cup sugar
2 eggs, well beaten
2 cups orange juice
2 tablespoons yogurt
2 tablespoons half and half
1/2 cup butter
1 cup oatmeal
1 cup chocolate chips (optional)


Topping:
1/4 cup white sugar mixed with 1 tbsp orange juice (optional-- add lemon zest or orange peel -- I didn't do this)

Directions
  • Combine softened butter, sugar and eggs.
  • Add other ingredients, lastly mix in oatmeal and chocolate chips. Sprinkle sugar topping over the top.
  • Pour into 2 well greased loaf pans. Cover and allow to sit for 20 minutes (I didn't actually do this).
  • Bake at 350 degrees for 45 minutes.
It was pretty good, especially on a cool cloudy day before a home football game.  You can see that the sugar topping gives the bread a crunchy surface that we like.  And anything tastes better with miniature chocolate chips in it ;-).

    I just made this and it was a huge hit. So very good! I substituted whole wheat flour and brown sugar and full sized chocolate chips because that's what I had on hand. I left one of the loaves just like that. In the other loaf I threw in half a cup of chopped pecans and half a cup of dried cranberries. The kids won't eat the nuts and Dom won't eat the cranberries, so I guess that loaf is just for me and my sister.

  2. Melanie, so glad it turned out well! I would totally put cranberries and pecans in mine but I don't have a sister and my household companions generally won't eat nuts and fruit in their quick breads.
