Spice Muffins



This is my modification of a recipe from this muffin recipe book (free download from Creative Homemaking). I've been trying to have a hot breakfast every day for the kids --- most of the time that ends up being either muffins, quick bread, waffles, French toast or breakfast cookies or bars. Though today I'm making doughnuts! Anyway, here's the recipe.
Spice Muffins

3 cups white flour
1 cup whole wheat flour
3 eggs, well beaten
1 cup sugar
2 cups milk
1/2 cup butter, melted
1 teaspoon each of ginger,cinnamon
1/2 tsp each of cloves, nutmeg
2 teaspoons baking powder
2 teaspoons salt

Preheat oven to 425 degrees. Sift together dry ingredients. Combine egg, sugar, shortening, and milk. Add dry ingredients. Beat until just barely smooth. Fill muffin tins 2/3 full. Bake for 15 to 20 minutes. Makes 24 muffins. We often add a few chocolate chips and sprinkle cinnamon sugar on top to make a crunchier top.
